simple egg tapas tip

We had some visitors the past weekend and ended up creating a selection of international dishes – hot dogs and burgers (and portobello mushroom version for vegans), Moroccan tabouleh, and Spanish tapas such as garlic peppers and this egg dish – huevos rellenos.

This is a great and rather light recipe which does not takes ages to create. Just boil eggs, cut them in half and place them on a bed of iceberg lettuce. Garnish on top with some mayonnaise (mix the mayo with your boiled egg yolk) and an olive (we used pepper filled olives) and voila – your dish is ready.
